Weeds

I kinda like the idea of being a weed instead of a rare high-maintenance exotic flower!  Teehee. Weeds have a mysterious kind of appeal! Beautiful and resilient -fights back, finds its way to continuously bloom and flourish year after year.. season after season. Talk about being hardy! :)

Mushroom, Ham on Scrambled Egg

Feel like going for a low carb breakfast that's easy to prepare? Try this!


Ingredients:
1    egg
1    slice of ham
1/2 cup of fresh button head mushroom (not canned)
2   cloves of garlic
6 strips of sun-dried tomato

Procedure:
1. Saute mushroom, ham and the strips of thinly-sliced sun-dried tomato in garlic for about 2 minutes.
2. Set aside sauteed mushroom, ham and sun-dried tomato.
3. In the same pan, scramble 1 egg
4. When scrambled egg is almost cooked add mushroom, ham and sun-dried tomato.
5. Salt and pepper to taste.

Serve with your favorite fruit juice!

Prep Time: 10 minutes

Eat Right, Live Well

Despite being a cliche, the words "life begins at 40" holds a deeper meaning for me. On the month I turned 40, I was also turning two years cancer-free! So literally, it's my second chance at life! On the advent of my 40th birthday, I made a decision to eat well. It is the best gift I can give my self. I joined some friends in their quest to eat right and live well. It was a bit difficult at first because as a kindergarten teacher, I am always exposed to kids' snacks like chips and sweets!

When I joined some friends in a program we call "Biggest Loser" one of the things we do to encourage each other to keep fit and stay fit is to share photos of what we eat and what forms of exercise we do. We weren't a big group, so it was easy for us to update each other. I'd say, this is one of the factors that kept me in the game. It was exciting to share results with people of the same interests.

To start with I had to keep a diet diary -this would help me track my calorie-intake since am still new to calorie counting. Next, I need to do some form of exercise.

As for eating, I started by lessening my carb intake and had to do away with junk food. Yes, at my age am still into junk food -yikes! But I made up my mind to give it up. Instead, I would snack on fruits! First thing I had to get use to is to have ready accessible "good eats" so I will not be tempted to hit the vendo machine at school for chips or chocolates. I gave up too much fried food and eat lean for protein supply.


I then hit the treadmill. This, I would say did not come easy since I gained over 20 lbs after two major surgeries -related to my illness. To start with, I would run for ten minutes a day for a week. It was all I could do in the beginning because I would easily tire. But I persevered. It did not take me long to build up stamina and stay longer in my machine.

Dieting is not easy, I had to seek some form of help. I am not into slimming pills, I was looking for something natural that would help me curb my appetite and at the same time help me burn calories.
